Asiago, originally from northern Italy, is a cow’s-milk cheese full of flavor and versatility. As it matures, its flavor intensifies, making a bridge between the classic mellow flavor of Parmesan and the bolder flavor of Pecorino Romano. An ideal cheese to incorporate into bread baking as well as adding complexity to pizza and pasta.
